Tanmachi is an area full of hidden gems and unexpected discoveries. Amid busy streets you’ll find quiet alleyways and parks, interesting buildings, and hole-in-the-wall cafes and restaurants. Gorge Bakery sits just two minutes away from Tanmachi Station. The cozy eat-in space, warm atmosphere, and trays and baskets full of pastries exude Parisian vibes. You’ll notice that every baked item is beautifully presented and impactful in appearance, but the flavors are clean and simple. “My goal is to accentuate the quality and flavor of the flour, so I aim to keep my recipes simple,” explains owner Kohei Kobayashi. Just a bite of his pastries will tell you exactly what he means. The Ichigo (strawberry) Danish (¥270), Spicy Sausage Pastry (¥300) and Salmon & Spinach Quiche (¥350) were all generous in portion, but we devoured them in no time. The pastry itself isn’t heavy or too buttery, so it pairs well with the raw ingredients and enhances their natural flavors. The Chocolat Framboise (¥260) is light and not overly sweet, but you can still enjoy the depth and decadence of the chocolate filling.
Kobayashi was motivated to start his own business when his grandfather and uncle’s business, Ogura Bakery, closed down. Upon graduating vocational school, Kobayashi worked at places like Benoiton, DEAN & DELUCA in Tokyo, Baguette Rabbit and Joël Robuchon to gain experience. “When I decided to work in the baking industry, I made it a goal to create my own business within ten years of starting,” says Kobayashi. Sure enough, two years ago he established Gorge Bakery at the exact same location where Ogura used to stand. When asked about his desires for the coming years, he answers, “The long-term goal is to continue my bakery for the next 20 years. I want it to become a part of this town. There will be many challenges in order to achieve that vision, so I hope that my staff and I can stay healthy, both physically and mentally.”
